Steak
A basic steak recipe.

Recipe
- Season the steak all over with salt and place it on a wire rack in a sheet pan. If desired, leave it in the fridge overnight, or proceed to the next step.
- Place the steak in a 275°F oven and cook until a thermometer reads 105°F for rare, 115°F for medium-rare, 125°F for medium, or 135°F for medium-well, about 20-40 minutes.
- Just before the steak comes out of the oven, add 1 tablespoon of oil to a cast-iron pan and heat over high heat until smoking. Add steak to the pan and cook until each side is well browned, about 45 seconds per side. Using tongs, hold the steak sideways to sear the edges. Serve.
